We run this program in the shoulder seasons only: spring (March to May) and autumn (October to November). Those are the months when Croatia is at its most extraordinary — the light is different, the pace is slower, and the locals have time to actually talk to you.

The Rewind Signature Escape is designed to show you the full picture. You start in Dubrovnik, one of the world’s most magnificent walled cities. You cross to the Elafiti Islands — Lopud and Šipan — to find the Croatia that hasn’t changed. You taste the oysters of Mali Ston, pulled from the water that morning. You ride through the lavender fields of Hvar. You walk the Roman palace that is still, somehow, a living city. You stand at the edge of Krka’s waterfall canyon and understand why people come back.

In the Dalmatian hinterland — Sinj, Cetina Valley, Poljica — you find the Croatia no one told you to visit. That’s where the program earns its name.

Day-by-Day: Your 7-Day Itinerary

Day 1 — Arrival in Dubrovnik: The City That Earns Every Photograph

Your journey begins in Dubrovnik. Private airport transfer to your hotel — a five-star property selected for its panoramic sea views and proximity to the Old Town.

After check-in, the afternoon is yours. Walk to the walls if the light is right. Find a terrace above the Adriatic. Let the city introduce itself slowly. Your Rewind host will have already left restaurant recommendations at the hotel. This evening is unstructured by design.

Day 2 — Dubrovnik & Elafiti Islands: The Slow Travel Day

Morning: Private guided walk of Dubrovnik’s Old Town — led by a guide born here, who knows which street is quieter, which café is actually good, and which stories the history books leave out.

Afternoon: Private boat transfer to the Elafiti Islands. Lopud first — the 15th-century Franciscan Monastery, the beach at Šunj, and a visit to an Family Farm where guests taste the island’s olive oil, sheep’s cheese, and local wine with the owners. Then Šipan: the largest of the Elafiti, the quietest.

Return to Dubrovnik by private boat as the sun drops.

Day 3 — Pelješac Peninsula: Oysters, Salt & the Best Wine in Croatia

Morning departure by private vehicle toward the Pelješac Peninsula — arguably the most underrated stretch of coastline in Dalmatia.

First stop: Mali Ston. A local oyster farmer meets the group at the water’s edge and hands you the freshest shellfish you will ever eat. Paired with local white wine. On the waterfront.

After lunch in Ston, the route continues along the Pelješac wine road: private wine tasting at a family estate vineyard, led by the winemaker. Late afternoon arrival in Split.

Day 4 — Split: Inside the Palace

Split’s Old Town is not next to a Roman palace. It is built inside one. Diocletian’s Palace — constructed in the 4th century, inhabited ever since — is 1,700 years old and still has a coffee bar, a fish market, and people hanging laundry from the windows.

Morning: Private guided walk of Split with a local guide — the palace, the cathedral, the hidden cellars, the peristyle. The guide grew up here. They know what the tourist route misses.

Afternoon: Free. Split rewards wandering.

Day 5 — Hvar: Lavender, Wine & the Island That Lives Up to the Reputation

Private boat transfer from Split to Hvar — a scenic crossing through the Dalmatian archipelago.

Morning on Hvar: E-bike tour through the island’s interior. Lavender fields, dry-stone wall terraces, ancient olive groves, hill villages. This is not the Hvar of beach clubs and yachts.

Afternoon: Private wine tasting at a family winery led by the estate’s enologist, covering the island’s indigenous varieties (Bogdanuša, Plavac Mali). A tasting of extra-virgin olive oil rounds it out.

Day 6 — Dalmatian Hinterland: Sinj, Cetina & the Croatia Nobody Told You About

Transfer by private vehicle toward the Dalmatian hinterland — the inland region most visitors never see.

Sinj: Home of the Sinjska Alka, a 300-year-old equestrian tournament (UNESCO listed). Private visit to the Alka Stud Farm — the tradition, the horses, the armour.

After: A traditional cooking class with local hosts in the Cetinska Krajina — lamb, soparnik flatbread, or seasonal speciality. The cooking ends with lunch. Late afternoon arrival in Skradin.

Day 7 — Krka National Park: The Waterfall You Don’t Rush

Krka National Park in spring or autumn: the water is higher, the crowds are lighter, and the air doesn’t have the edge of something being overrun.

Private guided visit to Krka — licensed local guide covering the ecological significance, the mills, the history of the Franciscan monastery on Visovac Island. You walk at your own pace.

Afternoon: Return to Dubrovnik (or Split) by private vehicle. Evening: Final farewell dinner — gourmet meal pairing local specialities with Dalmatian wine.

Add Montenegro: Kotor’s UNESCO-listed bay is an hour south of Dubrovnik. Two nights here changes the entire scale of the trip.

Add Slovenia: Start in Ljubljana and Lake Bled before descending to the coast. Two of Europe’s most quietly beautiful destinations.

Extend the islands: More time on Korčula, Vis, or Brač. Less structure. A chartered sailboat. We can build this.

When does the program run?
Spring (1 March to 31 May) and autumn (1 October to 1 November) only. These are the periods when Croatia is at its most authentic without summer congestion.
